A flat dessert: two thin sheets of soft sponge pressed together around a filling and dusted with sugar, the sponge made from flour, milk, lard and sugar. The original filling was a sweetened mashed-potato mixture; custard, buttercream and purple yam are the common ones now. The name means "pressed in between", or "sandwiched". Two towns are especially known for it, and a snack brand sells a mass-produced version in crème caramel, pandan, chocolate and purple-yam cheese.
