A layered sweet built from rishta: a thin web of batter piped through an eleven-holed funnel onto a hot griddle and baked in seconds. Eight to ten webbed layers are laid on a round copper tray, a filling of crumbled hazelnut with ground cardamom and coriander seed is spread over, and five to ten more layers go on top. The surface is marked out in a saffron lattice, baked briefly over charcoal, then drenched in hot sherbet syrup and left to rest overnight. Only trained confectioners make it, over a full day's work — never at home.
