A stew simmered with tomato, garlic and plenty of sweet paprika, traditionally eaten with a thick cornmeal mush called mămăligă. Mushrooms are a common addition, as are meat — lamb especially — and potatoes. It has a long association with mountain shepherds, and its name descends from a Latin verb meaning "to chop".
