Small pieces of meat threaded onto skewers and roasted over charcoal, or sometimes deep-fried in oil instead. Lamb is traditional and still the most common, though chicken, pork, beef and seafood all appear, and in tourist spots so do insects and other exotic meats. Cumin seed, dried chilli flakes, salt, black pepper and sesame or sesame oil are brushed or sprinkled on. A steamed-bun version glazed with sweet bean sauce is eaten alongside as a foil to the heat, and in some cities the meat is stuffed into small grilled filled breads. A street-food staple, cooked on open-air barbecues.
