A cold snack of soft, deep-fried lentil dumplings. Husked black gram is soaked overnight and ground into a batter, then fried; the hot dumplings are dropped into water and moved to a bowl of thick beaten curd, where they soak until spongy and mild. They are finished with chilli powder, roasted cumin, crushed black pepper and chaat masala, plus coriander or mint leaves, and often a drizzle of tamarind and coriander chutney. A recipe appears in a 12th-century encyclopedia, and it is a fixture of street chaat stalls and of the spring colour festival.
