A short, potent cocktail built straight in the glass: fresh lime is cut into wedges and muddled with sugar until the juice and oils release, then a clear spirit distilled from fresh-pressed sugarcane juice goes over the top and the glass is packed with ice. Tart, sweet and strong all at once, it is stirred rather than shaken and drunk cold. Sugarcane farmers in the country's interior are credited with inventing it; it was declared national cultural heritage in 2003, and the international bartenders' body lists it among its official cocktails.
