A thick, brick-red dip pounded from roasted red peppers and ground walnuts, thickened with breadcrumbs and given a sweet-tart edge by pomegranate molasses. Garlic, chilli flakes, olive oil and salt round it out, with lemon juice, cumin or tahini sometimes stirred through. Traditionally worked in a mortar and pestle, it is served as part of a cold mezze spread and scooped up with flatbread, or spooned over kebabs, grilled vegetables and fish. The name means "something that has turned red".
