Grated potato bound with flour and seasoning, pushed through holes and sliced into small cylinders, then deep-fried until the outside turns crisp and craggy while the inside stays fluffy. They were invented in 1953 by a frozen-food company hunting for a use for the slivers left over from cutting potatoes, and are sold frozen by the bag — a cafeteria and diner staple, often buried under melted cheese.
