A dense layered biscuit made from a stiff dough of flour, sheep fat, butter, sugar and salted water. Each piece is stamped with a carved wooden block that presses a family's own design into the surface, the block handed down through generations. The biscuits are stacked into a tall tower for the lunar new year, the number of layers signalling the household's standing, with dried curd tucked between the layers or piled on top alongside sweets and sugar cubes. The name means "shoe soles".
